Iced Ube Latte


The Iced Ube Latte, a delightful and refreshing beverage, has gained popularity in recent years for its unique combination of flavors and vibrant purple hue. To prepare this delectable beverage, one must follow a step-by-step process. This concoction seamlessly marries the earthy sweetness of ube, a purple yam widely utilized in Filipino cuisine, with the rich, comforting embrace of a classic latte. This introduction aims to provide a step-by-step guide on how to prepare this exquisite beverage.



For Ube Syrup:

For the Latte:

  • 1 cup of milk (dairy or plant based)
  • 1 tbsp of ube syrup
  • 1/2 cup of ice cube
  • 1/4 cup of whipped cream (for garnish)
  • 1 pinch of ube powder (for garnish)




Prepare the Ube Syrup:

  • In a small saucepan, combine the grated ube, water, and granulated sugar.
  • Place the saucepan over medium heat and stir the mixture until the sugar dissolves.
  • Allow the mixture to simmer for about 5-7 minutes or until the ube is tender and the syrup has thickened.
  • Remove the saucepan from the heat and let the syrup cool to room temperature.

Brew Espresso or Coffee:

  • If you have an espresso machine, prepare one shot of espresso.
  • Alternatively, if you don’t have an espresso machine, you can brew a strong cup of coffee using your preferred method. Make sure it’s hot.

Froth the Milk:

  • Heat the milk in a microwave or on the stovetop until it’s hot but not boiling.
  • Froth the milk using a milk frother or by vigorously shaking it in a lidded container until it becomes creamy and frothy.

Assemble the Iced Ube Latte:

  • Fill a glass with ice cubes.
  • Pour the shot of espresso or strong coffee over the ice.

Add Ube Syrup:

  • Drizzle 1 tablespoon of the prepared ube syrup over the coffee.

Pour Frothed Milk:

  • Gently pour the frothed milk over the coffee and ube syrup mixture. The milk should form a layer on top.

Stir and Garnish:

  • Use a long spoon to stir the coffee, ube syrup, and milk together, ensuring they are well combined.
  • Optionally, top your Iced Ube Latte with whipped cream for extra richness and a dollop of ube powder or purple yam extract for a visually appealing garnish.
