Rhubarb Strawberry Lemonade


Rhubarb strawberry lemonade is a refreshing and tangy beverage that combines the tartness of rhubarb with the sweetness of strawberries and the zesty kick of lemons. This delightful drink is perfect for warm summer days or as a refreshing treat any time of the year. In this article, we will provide a step-by-step guide on how to prepare rhubarb strawberry lemonade, listing all the necessary ingredients and their quantities.



  • 1 cup strawberries (fresh and frozen)
  • 1 cup rhuburb (fresh and frozen)
  • 1/4  cup lime juice (about 3-4 lemons)
  • 1 cup of granulated sugar (adjust taste as needed)
  • 4 cups of cold water
  • 1/2 cup of ice cubes (optional)

Wash and Cut the Rhubarb:

  • Start with washing the rhubarb stalks thoroughly to remove any dirt or debris. Trim the ends and cut them into small, 1-inch pieces.

Prepare the Strawberries:

  • Wash the strawberries, remove the green tops (hull), and cut them in half.

Juice the Lemons:

  • Squeeze the lemons to extract their juice. You can use a handheld juicer or a citrus reamer for this task.

Boil Rhubarb and Sugar:

  • In a large saucepan, combine the rhubarb pieces, sugar, and 2 cups of water. Place it over medium heat and bring the mixture to a gentle boil. Stir occasionally until the rhubarb softens and the sugar dissolves. This may take about 10-15 minutes.

Add Strawberries:

  • Once the rhubarb is soft and the sugar has dissolved, add the halved strawberries to the saucepan. Continue to simmer for an additional 5 minutes, allowing the strawberries to soften.

Blend and Strain:

  • Remove the saucepan from the heat and let the mixture cool slightly. Then, transfer it to a blender and puree until smooth. Strain the mixture through a fine-mesh sieve into a large pitcher to remove any seeds or fibrous bits.

Add Lemon Juice:

  • Stir in the freshly squeezed lemon juice and the remaining 2 cups of water. Adjust the sweetness and tartness by adding more sugar or lemon juice, according to your taste.

Chill and Serve:

  • Refrigerate the rhubarb strawberry lemonade until it’s well-chilled. You can also add ice cubes to each glass when serving. Garnish with fresh mint leaves for a delightful finishing touch.
